Most sheet pan racks can hold between 20 to 80 full-size sheet pans, with common capacities being 20, 30, 40, and 60 pans.
Sheet pans are larger and typically have raised edges on all four sides while baking trays are smaller and may have only one or two raised edges. Sheet pans are more versatile and are commonly used in commercial kitchens while baking trays are more often used in home kitchens.
While sheet pans and baking trays serve similar purposes, they are not the same. Sheet pans are larger, typically measuring 18" x 26" (full size) or 13" x 18" (half size), and have raised edges on all sides. Baking trays are usually smaller and may have only one or two raised edges.
Regularly wipe your sheet pan racks with a damp cloth and mild detergent to clean and maintain them. For tougher grime, use a soft-bristled brush.
