Four-speed cooling fan with 1/2 HP motor, with steam-on-demand and vario steam. Front, sides and top constructed of durable, heavy duty stainless steel, and holds (14) 12"x20" full-size hotel pans, or (7) 18"x26" full-size sheet pans with 13 position rack glides and 5 wire shelves.
Upgrade Manual Control to merge the positive attributes of the MenuSelect Control that is programmable and holds 100 recipes with up to 10 steps in each; Vent delay option; auto cool down; and more. Glass door eliminates the need to open to check on food, ensuring product consistency.
