The oven has three operating modes: steam, combi-steam, and hot air with extra functions including Crisp&Tasty, HumidityPro, and Controllable fan. Holds (6) 13" x 18" steam table pans. EasyTouch technology that features a 9" full-touch screen, automatic cooking with quick select buttons, 339 cooking profiles each containing up to 20 steps, on-screen help with topic-based video functions, as well as start time preset. Boiler model is steam generated by high-performance boiler outside of cooking chamber. Ring hinged door with door handle that features a safety latch and slam function. Antibacterial surface on control panel and door handle for food safety. Multi-point core temperature probe to ensure safe food temperatures as well as preheat and cool down functionality to increase efficiency. The oven also features fully automatic cleaning with regular and express modes with optional single dose dispensing. Data storage for HACCP and pasteurization figures.
