The Frymaster MJ240 Performance Fryer is designed for commercial kitchens with high volume production. With an oil capacity of 40 lb per fryer, this unit is capable of frying a large quantity of fried foods, including fries, chicken wings, and many other types of food items. It runs on gas and has an open fry pot design with twin rack-type basket support to provide consistent and even cooking. The Master Jet burner system is fitted with durable metal targets that help in creating a large heat transfer area which aids reliable and even heat distribution during cooking.
A centerline thermostat on the unit features a 1°F anticipating action to help predict the rate of temperature rise. The function automatically reduces the temperature overshoot, ensuring a better taste and uniform cooking of food items. This feature is also very effective in increasing oil life. The door, cabinet, and fry pots are made of stainless steel material which resists corrosion, ensuring long-lasting durability. To deflect all the oil around the fry pot out, the unit has a standard "front flush" which moves the sediment to the front drain valve for users to easily remove it.
The stainless steel door has a cabinet made of enamel which can be easily cleaned. The fry pots have covers that aid fast cooking. Additional features include a flue deflector, millivolt controller, EZSpark™ ignitor, a thermostat knob behind the front panel, and Over-the-flue basket hangers for easy maintenance. The unit generates a total of 220,000 BTU of heating power and is NSF and CSA listed for sanitary compliance.
