The dough sheeter is suitable for sheeting and stretching any kind of dough for croissants, yeast, soft, flaky, Danish and puffed pastries, savory dough, and stiff pizza bases. Users can define the thickness of the dough sheet and are provided with a unique 20 digital variable speed control option. The stainless steel rollers on the sheeter prevent dough from sticking. Each roller has a stainless steel protective guard on their sides.
Doyon NU-VU LMA620 has a forward-reverse action mechanism that is controlled by a foot-switch (LMA) and hand controls. Both tables have high-resistance, lead-free enamel coating on them and feature perfectly synchronized drivers. The exit conveyor operates faster than the entry conveyor to help avoid dough obstruction and prevents the delicate dough from tearing. The polymer conveyor belts are run by a powerful 1 HP motor that has the V belt transmission for smoother operation. The sheeter has easy to remove and replace high-efficiency dough scrapers and two (2) catch pans installed on both ends.
