The Vulcan VRH88 is a double stack cook and hold oven with (2) VRH8 ovens. Designed to hold, cook, and reheat food items, this full-sized oven is ideal for use in hotels, restaurants, and catering operations. This all-in-one unit allows user to cook a variety of dishes in limited time. The model includes (2) separate compartments to cook as well as hold prepared dishes at optimum temperature until it's time to serve. Each oven compartment has (3) wire shelves with stainless steel side racks to allow customized cooking. With a capacity to hold (16) 12"x20" steam pans or (8) 18"x26" sheet pans, this versatile oven is perfect for high-volume foodservice establishment.
This Vulcan commercial oven features control knobs to set the cooking time, holding temperature, and cooking temperature for user convenience. The cook time feature automatically converts the cook cycle into hold cycle once the dish is completely cooked. The cooking temperature can be adjusted from 100°F to 250°F. and the holding temperature can be set between 100°F and 190°F.
This double stack full-height oven has a 20-gauge stainless steel exterior and interior that help resist dents and scratches. The built-in steel frame of oven ensures increased strength and rigidity. The magnetic door latch with heavy-duty hinges is secured to the steel frame to prevent sagging. The 2" top insulation and 1-1/2" insulation at the back, bottom, and sides ensure maximum heat retention and optimum cooking performance. This oven is equipped with a low-speed fan motor that provides uniform heat distribution and allows consistent browning.
This dual voltage oven includes a cord and NEMA 6-30 plug set and requires a 208/240V, 50/60 Hz, 1-phase electrical connection. The oven has (4) 5" casters for maneuverability across the kitchen with 2 brakes for maximum stability even on rough surfaces.
